breakie bars

1 can 397 ml condensed milk
250 g rolled oats
75 g shredded coconut
100 g dried cranberries
125 g mixed seeds (pumpkin seeds, sunflower, sesame)

preheat oven to 130 degrees celsius

mixed all dry ingredients together
warm the condensed milk separately in a large pan,
then mix in dry ingredients

spread mixture into a greased 23*33*4 cm baking tin
and pressed down using spatular or hands

bake for forty mins to one hour until golden
cut into thick bars after 15 minutes and then let cool completely
then remove from tin and cool on a wire rack

vegan pancakes!!!!!!

it was my birthday this weekend, so pancakes for breakfast was in order
we tried a number of different recipes and these were the best ones! i like to add 1/2 a tsp of cinnamon to mine..

standard pancakes

1 cup white flour
1 tbsp sugar
1 tbsp baking powder
1/8 tsp salt
1 cup soy or rice milk
2 tbsp veg oil
combine dry ingredients, and in a separate bowl combine wet ingredients
whisk together until all the lumps are gone

wholemeal, sugar free pancakes

these ones are a lot heavier but more 'whole some' than the previous

3/4 cup wholemeal flour
1/4 tsp salt
1/2 tsp baking powder
soy milk ( about a cup)

mix dry ingredients then slowly whisk in milk until smooth


*** to cook: heat fry pan with any vege oil (i like sunflower or rice bran!) and spoon mixture forming little circles. flip when bubbles form on the top and bottom is golden brown :)

enjoy with maple surup, fresh lemon and sugar, yoghurt, banana, berries and apple concentrate or drizzled over top! mmmmmmmmmm

afghans...

nothing beats the good ole edmonds cook book afghans, best of all there egg free! yah

ok
200gm butter
75gm sugar
175gm flour
25gm cocoa
2 cups cornflakes

soften butter, and cream the butter and sugar
add flour and cocoa and mix to completely combined
lastly stir in the cornflakes, trying not to totally crunch them into smitherines
i like making mini ones, but dollop desired mounds of afghan mixture on a baking tray
slightly flatten and bake at 180 degrees celcius for 15 mins

when cool dress with some chocci icing and a walnut
*i guess quantities for icing
maybe 3/4 cup icing sugar, 2tbls cocoa, a knob of butter, and slowly add boiling water until its all combined but still thick

crazy vegan banana cake

this is so weird, its like a squiggy slice!! because it has no raising agent its quite compact, but i like it!
dense bananary goodness!
doesnt even need icing!
this reciepe was from www.vegfamily.com/

ingredients:
6 ripe bananas
1/2 cup vegan marg
1/2 cup natural sugar
11/2 -2 cup unbleached flour
tsp of vanilla
dash of cinnamon
dash of nutmeg
i added ginger too, but its optional


mash bananas, then add melted marg until combine well
add remaining ingredients except flour and 2 tbsp of the sugar

once everything is well mixed add flour 1/2 cup at a time until its a batter like consistency

pour into a lightly oiled 13-9 inch pan, and sprinkle with remaining sugar

and bake at 180 degrees Celsius until golden for about 45 mins to 1 hour

coconut haystacks!!!

mix:
3 cups of shredded coconut
1/2 cup of  cocoa or carob pwd
add:
3/4 cup coconut oil
1/2 cup agave surup
and mix until there arent any dry spots

with parchment paper ready, scoop tbsps of the mixture into mounds
freeze for at least 30 mins

they have loads more delicious vegan treats!!

vegan brownie :)

base ingredients:
1 cup walnuts
1 cup dates
1/4 cup cocoa powder

blend until dry and chunky. press mixture into a small pan and set aside

icing:
2 avocados (trust me, its good!)
1/3-1/2 a cup agave nectar
1/4 cup cocoa powder
2 tbsp vanilla extract
dsah a salt
dash a cinnamon

blend until smoooooth

spread icing over brownie mixture and chill in the freezer for 1 hr.
cut into little delightful morsels and serve xx

home made lip balm





i always keep a few spare lip balms- wrap them in pretty boxes, with colorful ribbons and give them as little thank you, i love  presents.

ingredients:
3 teaspoons grated unbleached beeswax
5 teaspoons carrier oil (sunflower, castor, or jojoba)
1-teaspoon honey, for flavor - this is the best part!

1. melt the beeswax and carrier oil together in the top of a double boiler, stirring to combine. remove from heat; add honey and essential oil. mix thoroughly so the honey does not clump.
2. to add a little color, stir in a tiny dab of lipstick with a coffee stirrer. pour the mixture into containers; let sit 20 minutes before covering or moving. for glossier lip balm, use 2 teaspoons wax and 8 teaspoons carrier oil.
